And, hello. My name is Jessica Knowlden.

A new(ish) transplant to California, I spend most of my waking hours at an incredible Interior Design firm in Los Angeles. It took me a long time to create a life that not only fills my bank account but feeds my soul. I hope to share bits and pieces of my journey with you.

My Bibimbap Life pays tribute to bibimbap, a traditional Korean dish of mixed rice and veggies. It represents the turning point in my life and immense love I possess for such a strange land.

How it all began.

After jumping head first into teaching English in South Korea nearly a decade ago, my world as I knew it would change forever. It wasn’t long before I fell in love with a woman and after surviving my first year, I returned home to a younger brother daring me to use my savings on a solo trip abroad. Eager to prove my independence once and for all, I booked one way flights into Lisbon, Portugal and out of Athens, Greece two months later. The rest is history.
